Even Easier Slow Cooker Honey Garlic Ribs

The original recipe is very easy but I made some additional shortcuts. As well, the  use of black garlic with this recipe adds a richness that is amazing. The original recipe also gives options for cooking on high and low temperatures, but I think low and slow provides the best outcome. Enjoy! 

Ingredients

  • 2 1/2 - 3 lbs pork ribs
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 cup 9 Acres honey :-)
  • 1/2 cup soy sauce
  • 8 cloves garlic, peeled + 4 cloves black garlic (also from 9 Acres)

Instructions

  1. Season the ribs evenly with the salt, pepper, paprika and chili powder. Rub in on all sides.
  2. Put honey, soy sauce and all the garlic cloves into a blender and blend together until liquified.
  3. Put the ribs in your slow cooker, standing up with the meatier sides down where possible, and the bones facing inward. 
  4. Pour the blended ingredients over the ribs, making sure that you coat all sides with some of the mixture. 
  5. Cover and cook on low for 7-8 hours. Check after the allotted time. The ribs should be falling off the bone, cooked through and tender. 
  6. Remove the ribs from the slow cooker and cut between the bones to your desired sizes. 
  7. PRO TIP: Use a gravy separator to separate the fats and oils from the resulting sauce developed from the cooking process. Use the sauce with the ribs or on rice as desired.

Quick Honey Garlic Sauce Recipe

Ingredients:

  • 2 tablespoons butter (or oil for a vegan version)
  • 6 cloves garlic, finely minced
  • ½ cup honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons soy sauce, can be gluten free


Directions:

  • Melt the butter in a small pot over medium heat. Add the garlic and cook for 1 minute.2 tablespoons butter,6 cloves garlic
  • Add the honey, apple cider vinegar, and soy sauce and bring the pot to a boil.2 tablespoons apple cider vinegar,2 tablespoons soy sauce,½ cup honey
  • If you're using the sauce to make baked or pan-fried chicken, fish, or pork, boil the sauce for 2 minutes, until it's slightly thickened.
  • If you're using the sauce as a dip, boil it for 4-5 minutes (total), so that it is thick enough to lightly coat the back of a spoon. Remember, it will thicken considerably as it cools. 


Notes:

  1. For an asian twist, add 1 tsp+ grated ginger and a splash of sesame oil. 
  2. Can replace the apple cider vinegar with rice win vinegar, or in a pinch, good  ol' vinegar.  
  3. For extra heat, add siracha  sauce, a pinch of cayenne or your favourite Casa Piñata sauce (check them out!  casapinata.ca)
  4. Using it as a sauce for stir-frys?  Mix 1 tsp. cornstarch with 4 tsp. water and add this to the mixture at the end.  Simmer for a few more minutes until the sauce thickens.

Beautiful and mouthwatering Tomato Jams

Heirloom 'red' tomato jam:

I'm unique, not too sweet and pack a little heat. 

  • Use me instead of ketchup with your grilled cheeses, on your burgers and with  tasty sausages in a bun.
  • Add a dollop on your Thai food.
  • Use me as a dipping 'sauce' for your favourite fried foods.
  • Pair me with a sharp cheddar, a brie or goat's cheese.
  • Helloooo English muffin with blue cheese (a neighbour's favourite combo)
  • An unexpected treat with rich chocolate desserts such as warm brownies or flourless chocolate cakes.  

Heirloom green tomato jam:

I'm fresh and sweet with twist of citrus. 

  • Delicious with cornbread, corn tortilla tacos or cornmeal battered bites.
  • Put me alongside salty meats on a charcuterie board or for breakfast on toast with bacon.
  • Buttery croissants and butter cookies,.... a dollop will do!
  • Pair me with cream cheeses on crackers. 
  • Use me as a garnish on cheesecakes.

Garlic Scape Powder

A perfect  match for garlic and onion lovers! Enjoy the taste of a milder garlic  and green onion combined. Looks as green and fresh as it tastes.  


​​You  can use it in place of where you would normally use garlic powder. In  this scenario, it will provide a milder garlic flavour than the regular  garlic powder. Anywhere you want to add some subtle garlic flavour, this  is a good option.   

Here are some other options for the garlic scape powder:  

  • Roasted vegetables (potatoes, carrots, etc)
  • Great addition to rubs and salad dressings
  • Elevate your pesto  
  • Simple pasta: powder + butter + Parmesan to taste 
  • Enhance your mashed potatoes   
  • Add it to soups  
  • Create flavourful dips  
  • Spice up your baked chicken  
  • Mix into bread or pizza dough  
  • Combine with butter to put over popcorn or baked potato  
  • Create your own herb butters  
  • A great way to marry onion and garlic flavours in a grain-based salad  
  • Add cream cheese, salt and powder for bagel spread

Garlic Bread Recipe with Garlic Scape Powder

Ingredients:

  • loaf or french bread or long baguette
  • 1/2 cup softened butter
  • 1/2 teaspoon 9 Acres Garlic Scape Powder
  • 3 garlic cloves minced
  • 1 teaspoon Italian seasoning (or whatever you have on hand! Fresh or dried, oregano, basil, thyme, parsley)
  • Optional: 1/2 cup freshly grated parmesan cheese or your cheese of choice! 

Directions:

  1. Preheat the oven to  400 degrees F.
  2. Slice the baguette or loaf length-wise.
  3. Mix together the butter, garlic, garlic scape powder and herbs.
  4. Spread the mixture generously (it makes lots!)  over the bread. 
  5. Bake for 12-14 minutes until golden or the cheese bubbles.

A moderately spicy and deliciously tangy powder that pairs well with cheesy dishes. The smell alone with make your mouth water! 

Pairs  well with cheese dishes as the light heat tends to cut through oils.   Also pairs well with vegetables (tomatoes, onions, even salad greens  like arugula) and meats.  Use any time you use bell peppers for an extra  punch of taste.​

  • Amazing pizza topping
  • Corn on the cob with a sprinkle of these... heavenly!

Try this simple drink on a cozy winter afternoon or by a cam

HONEY!

- Put a generous teaspoon of honey in a mug.  

- Add a squeeze of fresh lemon juice 

and a splash of apple cider vinegar (optional)


Adjust to taste.

Tomatillo Salsa recipe

From Sazón, cooking school in San Miguel de Allende, Mexico! - Recipe by Chef Paco Cárdenas

A fresh green salsa you can pair with red salsa too! Thinner but packed with taste. Pairs well with corn, dairy and chicken (think chicken burritos, tacos or casseroles). 

Ingredients:

  •  20 small tomatillos, husks removed, rinsed well (they can be sticky) and cut in quarters
  • 1 garlic clove chopped
  • 4 Serrano chilies (will give you a hot salsa, decrease number for a milder salsa)
  • 3 Tbsp. onion, chopped
  • 1/2 cup cilantro leaves, chopped
  • sea salt to taste
  • 1 avocado, cut into 1/4 inch cubes for garnish

Directions:

  1.  Using a mortar and pestle (or good ‘ol food processor in a pinch), mash or blend the garlic, chiles and some salt until you have a very smooth mixture. 
  2. Add the cut tomatillos and crush or blend a little bit more, 
  3. Add the chopped cilantro and combine all the ingredients well. 
  4. Garnish with chopped onion and avocado cubes.  

Notes:

  1. For a different taste, I’ve also made this with tomatillos which I roasted in the oven first. 
  2. You can substitute jalapeño peppers for the Serrano chiles. Serrano  chiles are slightly spicier. Remember, the more of the whiter ‘rib’ part that holds the seeds you include, the hotter the salsa will be!
  3. Mellows nicely if made then refrigerated overnight.
